Please tell me what a "Sigma" step is, relative to the whole and half steps when building a scale. Thank you.

Following up on my preceding post questioning what a Sigma Step is I forgot I should verify if I have the right steps for forming a scale!

MINOR SCALE

That's how you call to the step connecting two tetrachords.
And yup, your structures are correct.

The C-major scale that you posted above is composed of two tetrachords. (C-D-E-F & G-A-B-C). So if the "Sigma" step is the step between them, then it would be F-G.
