My teacher and I use 3 different series-right now I have active pieces in JT3, Alfred 3 and Aaron 3. Sometimes we change for something as simple as ease of use-for example: Spinning Song has NO page turns in Aaron, it has one in JT. Mostly, she has me use different books because she feels that each method has concepts it teaches very well, and concepts that it doesn't cover as well. Even if it's as simple as a less well arranged piece, she feels it's worth swapping. If the piece is more attractive to the student, they're going to enjoy playing it more and learn the concept better-in her opinion. I was just wondering if I'm the only one doing that and if others find value in it.

Your teacher sounds like she understands what she wants to teach and what she finds important. She has her own "method" and uses those books as tools to teach you. I'd say you are very lucky.
