refinishing question

Hi. I'm in the middle of refinishing an old baby grand piano. I've stripped off the old varnish and have discovered that the inside of the case is not veneer. I plan to restain the piano or maybe even tongue oil it. Should I veneer the inside of the case or is it not necessary? Can I just leave the bare wood? I would appreciate some advice from those with refinishing experience. Also, does anyone know anything about an HVLP spray system?
