As a follow-up to the transcription of Keith Jarrett's arrangement of "Over the Rainbow" that I posted very recently, below is a link to the transcription of the beautiful piece called "Country" he performed on Saturday Night Live on April 15, 1978.

Transcribing piece like this is very difficult and requires a lot of time.

How do they transcribe piece like this?
Do they use any software or program or do they use only their ears?

When I transcribe jazz solos I spend a lot of time and I write only the melodic lines.

There is software that will assist with transcribing music:

Look for Transcribe!

Also, The Amazing Slow Downer will help with slowing down music, but not with figuring out the notes.

Yes.
Transcribe! is an useful software.
I know it. I transcribed some Bill Evans' solos with it.
Great software.

It is also difficult to write the right rhythmic figures.
If someone learn to use these kind of software can transcribe difficult pieces like this very fast?

There is a nice transcription of jarretts 'country' from the original 'my song' recording. Just a snippet, the B section once, but beautifully inserted.
Transcribed is always slow and painful.
I dont think sofware helps. I use a foot controlled old Sony Transcription unit with full size cassette tape for very fast sections, but otherwise just replay, replay.
I ignore harmony except to get a good 'average' of the harmonic structure, usually from opening and closing chorus heads.
Transcriptions are great for analysis and style developement, but rarely serve as performance pieces.
