My P90 controls VSTHost, using Truepianos and a free string VSTi as plugins. Works great. So I accidentally hit one of the other piano voice buttons on the P90 and it changes the sound and adds a choir in the background. I push the harpsichord button and it changes the sound to something else, nothing like a harpsichord. Each voice button on the P90 is also affecting the reverb.

I don't understand what's happening. I thought my keyboard was producing midi commands for a piano keyboard that went into VSTHost, which routed those midi commands to both Truepianos and the string vsti, causing each plugin to produce their sound. Why does changing the voice on the P90 have any effect on the sound produced?

MarkL,

Try turning the volume all the way down on your P90 and see what you get. Maybe there is a combination of sounds "mixing" in the output of your soundcard.

Those buttons you are pressing are sending midi commands that say things like "change to instrument number 5".

The most common setup (called GM) has instrument number one as a grand piano. After that not everyone follows the same convention.

Volume slide on P90 has no effect on sound (or volume).

I think this might be it. You're correct that instrument number 1 is grand piano. When I push instrument 2 (also a piano) I can hear that it adds some kind of string sound that I originally thought sounded like the choir sound. That makes sense because the string plugin obviously has all kinds of string instruments, number 2 happens to be a cello pizzicatto. I think the sound I mistook as some kind of harpsichord was actually one of the smaller string instruments played pizzicatto. Pushing some of the P90 buttons has no effect, consistent with your observation that these things aren't consistent. Close enough to an explanation for me, thanks.
