I have nearly zero experience with digital pianos but of the ones I've seen at the local Roland/Yamaha dealer the FP-7F was my clear favorite. Even through the built-in speakers it sounded better than, say, a rental upright acoustic piano. All of the other digitals (the Roland '305, Yamaha P95 and one of the "Arius", a Roland F-110) were very tinkly sounding through the built-in speakers. Worse than a rental spinet piano.
I like the keys on the FP-7F pretty well but actually preferred one of the "lesser" Roland models for feel. Even the FP-7F keyboard was not as easy and fun to play as some of the el-cheapo upright acoustics.
So I agree the FP-7F is a good starting point. It's the only digital piano in that shop I would have considered buying...if I had $2000+...and I wanted a digital piano...and I didn't mind it being on a stand instead of in a cabinet. It sounded really good as is, through my good Sennheiser headphones I'll bet it was awesome.
