Are the any lesser-known composer's who composed for Harpsichord like Rameau and Couperin? Is Scarlatti considered as famous? Is he a recently played composer?

Scarlatti is probably considered more "famous" than Rameau and Couperin. He is currently more commonly performed than they, at least in piano recitals. -J

If you want to explore harpsichord music, there was a series published by Ricordi of harpsichord music of various countries: Spain, Italy, etc. I do not know if it is still available, but that is a good overview.

Louis Couperin, Frescobaldi, Froberger, Bohm, Duphly, Handel, Buxtehude, Telemann, Muffat, CPE Bach, Soler are some that come to mind.

Most certainly Frescobaldi, Froberger and the rest that sandalholme listed. There are three enormous volumes of Froberger on the IMSLP database (some 300 pages of keyboard music in all). You could also take a look at the English virginalists. Some other names: Purcell, Loeillet, Chambonnieres, John Blow, Byrd.
Shot in the dark: I'd say the ones that are in general 'lesser known' are the ones who wrote in a style that suited harpsichord or spinet or virginals or clavichord, but did not suit the piano so well, and so did not become part of the standard piano repertoire.

Depending on how deep your education in early Baroque music went, you may want to give unmeasured preludes a shot. There are many works by Couperin, but I like Elisabeth Jacquet de la Guerre. Jean-Henri d'Anglebert composed unmeasured preludes as well. This is a mainly French genre. There is a collection of unmeasured preludes called Le Pupitre, but it can be hard to obtain. Here is a link. I have never ordered from them so I cannot vouch for them.
