I am relatively new to the forum and wanted to ask for some suggestions on what to play. Here is my issue. I have been playing casually off and on for almost 30 years and genuinely love to play and to practice although I will never win and competitions, play professionally or probably not even be considered a good pianist. But I do really love the piano, the music and the challenge. I am 64 years old and just found out I have some pretty significant arthritis in my left hand and also some in my right. Basically, the problem is the thumb, so I can still play but have to find things to play that do not stress my hands. I have been working with a book called “Chopin, An Introduction to His Piano Works” edited by Willard Palmer, and decided to try and memorize some of these easy works. So far I have learned and memorized “The Waltz in A Minor”,” Waltz in Ab Major”,” Waltz in B Minor” and am working on the “Nocturne in C minor”. What I love about these pieces is that they are all pretty easy on my hands, especially the left and although they are not complicated, I do not get bored with them no matter how long it takes me to memorize them. Also, I can find different interpretations on you tube and take my time and while cutting down a little on my actual playing time, still enjoy researching and analyzing others versions and the whole memorization process.
Can anyone suggest other pieces that may be about this same level, and somewhat easy on the left hand, especially when it comes to the thumb over or under motion. It is devastating to me to think about not being able to play so I am determined to continue as long as I can but to do it with pieces that do not cause my hands to much pain or stiffness, and still offer a challenge to my level of playing.

The slow movements of Mozart Piano Sonatas usually have easy LH accompaniments - chords plus maybe a bit of Alberti bass. Try K330's slow movement, which is often played as an encore by itself.

Then there's the first movement of Beethoven's Moonlight Sonata, which has simple chords in LH all the way through.

Many of Chopin's mazurkas would seem to fit your requirements. Some of John Fields' nocturnes, too. I am guessing that there are probably a number of Grieg's Lyric Pieces and Scriabin's early preludes that might be workable, too.
