I play a hymn with slightly rhythm variation. One is straight while other one is swing feel. I am not sure its correct.

What I hear in your second sample:

. . . one hand hits its note slightly after the other hand.

"Swing" doesn't mean that the left hand, and right hand, have an offset in the time of the downbeat.

"Swing" means that the "strong" beats (in 4/4 time, beats 1 and 3) are played _longer_ than the "weak" beats (2 and 4).

The "swing" sound is _close_ to playing triplets, with beats 1 and 3 worth 2 triplet beats, and beats 2 and 4 worth 1 triplet beat.
