Tim Richards' Improvising Blues Piano seems to be the accepted gold standard. Whether it meets your specific needs . . .

Hey Peter, it may not help but all the pages in the book I use are youtube vids. As to gospel blues, etc., there's a long list but here are a few that are helping me:
