Has anyone found any really good programs or apps for automatically transcribing music? Students seem to have more motivation to practice when they have sheet music for songs they like. I tried AnthemScore (lunaverus.com) and it works pretty well for simple songs, but not so well on popular rock.

You're missing a teaching opportunity here. Write out a lead sheet; just melody and chords. Then talk about how a single pianist, on an acoustic piano, with just a lead sheet, can try to convincingly convey the feeling that a recording studio may have devoted dozens of tracks to. The result will be students who can get outside the sheet music when it's called for.

That's my approach.

This is an extremely difficult technical and programming problem. I'm surprised that there's anything out there that works at all well.
