Thanks for posting the link--I've heard descriptions of this classic skit, but never actually seen it! although I've encountered page turners who were almost that bad...
No, I can't identify the music--it's certainly not a well-known piece. If I had to take a wild guess as to who the composer was, I'd say Moskowski. Just a wild guess, probably wrong :-)

I saw that alibris and maybe even amazon sells a VHS tape from 1990: Victor Borge's Best Act I and Act II, I believe was the title that included this skit. The page turner is one of his sons. Couldn't find anymore on the song. Thank you for posting this about Victor Borge, it is wonderful to be reminded of him. The anniversary of his death is Dec. 23, I believe. Or maybe you can borrow the tape.
