On the average, which would have longer sets of strings a 48" upright or a 6' grand? Larry Fine's The Piano Book recommends at least 48" tall upright or at least 6' grand, due to length of strings (I suppose). In terms of sound quality, what grand piano size would a 48" upright be comparable to?

It varies on the angle of the strings. The back scale of the lowest bass notes on an upright will be short if they tried to keep the longer speaking lenghth.

Don't get caught in the "longer is better myth".
Here is some scale lengths that I have.
I will give you the longest lo tenor note# with plain steel wire and the lowest bass wire note A0.
SteinwayA 6'1" Bass 1415 mm tenor note 26 1153mm
Conover 48"upright Bass1360 tenor note 30 1104
Knabe 5'8" Bass 1227 tenor note 31 959.5
Willis 44"upright Bass 1023 tenor note 31 894
In order to make the comparison you suggest you should go out and do some listening. There are many factors as well as (optimal) string length that gets the high quality sound.
