A piano rebuilder might find in a high-quality old upright lots of very high quality wood for making a variety of parts. A set of maple backposts might be very appealing.
What you find useful in an old piano will reflect what you know about pianos and your woodworking skill level.

Tuning pins, why? Once used, you throw them away.
