I couldn't find a reaction to what the choir function means. Some people hinted at a extra manual. But on most organs (at least on mine) it stands for changing the sound to that you get when the air in very large pipes viberates at the top. It's very small effect you will hear the sound moving a little). Their are some very large explainations how that comes. But it's a function that mimics real pipe organs.
