I'm wondering if anybody has recommendations on a sound module and/or PC-based MIDI software that has really good baroque harpsichord and pipe organ sounds.

This isn't exactly what you were looking for, but this is a pretty good sample disk. You can play it from your PC with any sample playing software that can read Akai files. Here's the link (check out the MP3 demo): http://www.ilio.com/propeller/cathedral/index.html
