Broiled skinless chicken breasts rubbed with herbs, fried rice with almonds, steamed veggies and pasta, salad with Creamy Parmesean/Romano dressing. Fresh strawberries and angel food cake.

Why do I always have to cook?

Kathy, let me know how the pot roast comes out. I'm curious to know how it goes over in Maine!

It was great, Matt. The reduced wine with dripping made for a tasty au jus. I *do* really want to give it a go with the fresh herbs. No doubt, a lot of flavor lost with dried. I put a whole acorn squash in the oven and several baking potatos. All of them cooked quite thoroughly in the time frame. It made for a nice combo. Yum! Now, off to make Thai chicken in red curry.
