I remember the first time I ordered a bowl of chili at a horse show in Texas. I just got a bowl of meat, no beans! I've learned a lot since then.

I'm giving Matt's pot roast a shot, since JF never did and I have a skinny college boy home for the week in need of fattening. I blush to say, however, it is non-gourmand style. Didn't have fresh herbs, so using dry and can't find caraway seeds in my pantry, but never much cared for them anyway. Plenty of red wine, though! So, we'll see - I'll report back.

An Amish dish -- noodles and chicken with mushrooms, celery, carrots and a sauce made with chicken stock and milk and topped with shredded parmesan cheese.

Kathy, let me know how the pot roast comes out. I'm curious to know how it goes over in Maine!

It was great, Matt. The reduced wine with dripping made for a tasty au jus. I *do* really want to give it a go with the fresh herbs. No doubt, a lot of flavor lost with dried. I put a whole acorn squash in the oven and several baking potatos. All of them cooked quite thoroughly in the time frame. It made for a nice combo. Yum! Now, off to make Thai chicken in red curry.
