I do really want to give it a go with the fresh herbs. No doubt, a lot of flavor lost with dried. I put a whole acorn squash in the oven and several baking potatos. All of them cooked quite thoroughly in the time frame. It made for a nice combo. Yum! Now, off to make Thai chicken in red curry.
